Chipped Beef and Cabbage Soup

When I first started the Blood Type Diet and learned that my O blood type thrives on beef, I was excited to try as many different beef recipes as I could find. 

I started off cooking bland and simple ribeyes and ranch steaks on the skillet with a simple side dish.  But that wasn’t enough for me. I had a yearning for more flavor and creativity. 

One of my favorite appetizers to order at my local diner is the beef and cabbage soup, and recently I’ve been having a taste for it.  So I decided to recreate it at home. 

I wanted to mimic the recipe by using cubed beef, but I had an extra package of chipped beef to use up.  So I decided to make due with that, and the soup turned out great!

What is Chipped Beef?

Chipped beef is a very thinly sliced piece of beef, like a cut that would be used to make a cheese steak sandwich or even used for roast beef lunch meat.  I had never heard of it when my butcher substituted it in place of cubed beef that he was out of. 

Hearing him say “chipped” made me think of something like shredded meat.  Boy did I have a mystery bag that day because I didn’t know what I had actually bought, neither could I see inside the package. 

Well now I’m thankful that he was out of cubed beef because I was introduced to a brand new cut of beef.

Here’s my recipe.

Cookware and Tools

1 Large Pot (Be sure to use a truly large pot for this recipe.  My soup came to the top brim of my pot)

2 forks

Knife

Cutting board

Ladle 

Ingredients

All ingredients listed are on the highly beneficial or neutral lists for the Blood Type O Diet.

Olive Oil

4 cups (1-32 oz carton) of organic beef bone broth

1 lb of chipped beef (or skirt or cubed steak)

1 large onion

1 whole head of cabbage (or 2 bags of shredded coleslaw)

1 turnip

1 parsnip

2 tomatoes, roughly chopped (or two cans of stewed tomatoes)

1 tbsp of minced garlic

Cayenne Pepper

Crushed Red 

Garlic Powder

Onion Powder

Oregano

Parsley

Salt

Instructions

  1. In a large pot, heat olive oil and add the onions.  Sautee for 3 minutes.

  2. Add the chipped beef and seasonings.  Cook for about 5 minutes, or until half pink, half brown.

  3. Use two forks to begin pulling apart the large pieces of beef into smaller bite sized pieces.

  4. Add all other vegetables and beef bone broth and cook for 45 minutes, or until the parsnips and turnips are soft enough for your liking. Enjoy!
